If I had to use a made up number I'd go with _I_'s recommendation, 10% should work as well as anything most of the time without being tempted to waste too much space. But I don't worry about it personally. Even 99% full the SSD will still perform many times faster than an HDD. It may not be optimal performance, but it's far from terrible.

You're supposed to set space aside before installing your OS. Ideally you should leave 10-20% unpartitioned when you format your drive (setting up a partition the full size of the drive and leaving 20% free doesn't do anything, the data can still be written to any block on the drive). Your SSD probably has overprovisioning, as it has 240GB available instead of the full 256GB. So 16GB is probably reserved as a free space buffer.
